The caviar is made up exclusively of sturgeon eggs, but several fish species may be involved.

Caviar used to be consumed by the poor. The Parisians discovered it in the 1920’s when the Petrossian brothers arrived fleeing the Russian October Revolution. Caviar became a luxury product.

Some caviar is also being produced in the Gironde ( France).
