The rustic Aubrac breed originates in the high plateaus of the Aubrac, on the three departments of Aveyron, Cantal, and Lozère.
This breed provides a meat that is particularly tasty and the Laguiole, a cheese made of raw milk.
The know-how of the producers is now being recognized by labels and certificates.
