The average requirements for food being usually met in developed countries, consumers tend to become increasingly demanding in terms of quality and originality of the products offered.

The consumption of more differentiated and personalized products tends to replace the mass consumption of homogeneous food.

This situation explains the new trend for local products. In France, the National Council of the Cooking Arts (CNAC), along with the Regions are making an inventory of these products and of the culinary heritage.

These better characterized products are certified by names, labels, and certificates of origin.
